Legendary Four Thieves Vinegar - 14th Century Medicine

2 T chopped fresh Lavender flowers
2 T chopped fresh Rosemary tops
2 T chopped fresh Mint
4 Cloves - crushed
2 T chopped fresh Sage - culinary
2 T chopped fresh Rue
4 Cloves garlic (peeled and crushed)
4 C. white, cider or wine vinegar

Toss herbs and garlic together in a one-quart mason jar, with lid, cover with vinegar and allow them to marinate for seven to ten days in a sunny location. After seven to ten days, strain the vinegar through a fine-mesh sieve into a second, clean 1-quart glass jar.
Store at room temperature until ready to use and serve as you would any seasoned vinegar: as a basis for vinaigrettes or as a seasoning for braised meats and vegetables, for your protection or medicine by Teaspoon.

It is used in Italy and Ethiopia in cooking and pickling. It is also used to flavor meat and other dishes. Placing it in a boiling sauce will get rid of the bitterness. Please wear gloves when handling, especially on hot sunny days. The essential oils can cause Photodermatitis. The sap can also irritate the skin and sometimes cause blistering. It is an evergreen in most climates.
